The 51st Food Chemistry Days 2023 took place in Bonn again after almost 20 years from August 21-23 and offered the opportunity for intensive discussions with professional colleagues. The interest was very high with almost 480 participants despite the early August date. This year's main topics "Food Law", "Secondary Plant Ingredients" and "Sustainably Produced Food (Analytics, Safety, Technology and Sensory)" were covered in four plenary and 22 discussion lectures, 15 poster flashtalks and 220 poster presentations.
